Ingredients:

4 or 5 medium to large cooking apples

6oz of dairy free spread

2oz of agave syrup (if you like it sweeter then add extra)

One teaspoon of vanilla extract

12oz gluten free flour

3 table spoons of soya flour

160ml of water

1oz  desiccated coconut

Grease a 3 pint oven proof dish or tin and set aside.

Pre-heat oven to 180 degrees

Mix the dairy free spread with the agave syrup and vanilla extract until smooth and mixed well.

Gradually add each spoonful of soya flour and the water to the mixture, being careful to mix well so as not to curdle.

Fold in the coconut.

Peel and slice the apples and line them along the sides and the bottom of the dish or tin, spoon the sponge mix evenly over the apples and place in the pre-heated oven for 30 – 35 mins.

Leave to cool for a few minutes before turning out on a wire rack to cool.
